Forgot to add that I used the Double Cheese Quesadilla because my store didn't have the enchilada flavor.

This is one of my favorite Betty Crocker recipes. I make this every month. The only thing I would say, though, is ignore the part about not using cooking spray in the baking dish. If you don't want problems lifting the enchiladas out, use the spray; it won't effect the taste any. The enchiladas will stick or tear if you do not use the cooking spray. Also, I skip the added topping it calls for. It's not necessary. I never use them in other Hamburger Helper dinners either. The cheese tastes fake, so I skip it.

These were very easy to make but lacked any real flavor. They were very blah and not something that I will ever make again. We had a lot of left overs...nobody had seconds or even finished their first serving. Most of the leftovers went straight to the trash.

This was a great way for me to use up some of our meat in a way that my family enjoyed. Super easy to make too.

I made this one night for my husband and just loved it and couldn't believe that it was hamburger helper and salsa. This is a must try.
