cups Progresso® reduced-sodium chicken broth (from 32-oz carton)

cup water

cup uncooked medium shell pasta (4 oz)

frozen cooked meatballs

cups fresh spinach leaves, finely shredded

can (8 oz) pizza sauce

Directions

  • 1 In 3-quart saucepan, heat broth and water to boiling. Add pasta and meatballs; return to boiling. Cook 7 to 9 minutes or until pasta is almost tender. Do not drain.
  • 2 Add spinach and pizza sauce; cook 1 to 2 minutes longer or until thoroughly heated. If desired, sprinkle individual servings with grated Parmesan cheese.

for futurejedmom: Dont use large pasta;use 3/4 c. aci de pepi; easier for kids; also, buy l pd. grd.meat, season as for lg. meatballs, roll into little balls and make in soup on simmer. can use spinach in can, drained, and rinsed real good to get can taste out; this is closer and truer to wedding soup; add parmesan of top if you like cheese w/your soup. hope you try this. 5 stars os fpr my way. Pgh. Phyl.

I was pretty desperate for a quick dinner; since I had all the ingredients on hand I made this for my family and it is a recipe I could make again and everyone would eat it. The kids were on the fence about the spinach, however they liked everything else. (Since I'm the meanest mom in the world, I made them eat the spinach anyway...the complaints were minimal.) I think next time I'll reduce the pasta to 3/4 cup; 1 cup seemed like too much. I only gave it 4 spoons because I think it needs more veggies or something to liven it up, but for a super quick dinner this is great!
