Easy Italian Chicken Pie

Stuffed with your favorite Italian ingredients, this pie is topped with a Bisquick® crust that’s baked golden and tender. It’s an amazing combination that's also easy, especially if you’re using up leftover chicken!

Ingredients

cups cubed cooked chicken
1/3
cup thinly sliced green or red bell pepper
1/2
cup pizza sauce
1
package (4 ounces) shredded Italian-style cheese blend, pizza cheese blend or mozzarella cheese (1 cup)
1/2
cup Original Bisquick® mix
1
cup milk
1
egg

Directions

  • 1 Heat oven to 400°F. Spray 9-inch pie plate with cooking spray or grease with shortening.
  • 2 Stir chicken, bell pepper and pizza sauce in pie plate; arrange evenly. Sprinkle with cheese. Stir remaining ingredients in small bowl with fork or wire whisk until blended. Pour into pie plate.
  • 3 Bake 25 to 30 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

To measure Bisquick mix, spoon without sifting into a dry-ingredient measuring cup and level with a straight-edged utensil. Do not pack or tap Bisquick mix into the cup.

I tried this tonight. The taste was good, but I always have trouble with this type crust being mushy underneath. I even cooked this 5 minutes longer than it said, and it was still mushy, but golden brown on top. I tried warming the milk first, but that didn't help either. Any suggestions?

This was very good. I used spaghetti sauce intead of the pizza sauce because that is what I had on hand. I added extra sauce and green pepper.

It was quick and easy, but that is all it had going for it. It was very dry and almost tasteless. My husband requested that I not make this again, and I agree with him.
