Easy Garden Bake for Two

Ingredients

small zucchini, chopped (1/2 cup)

large tomato, chopped (1 cup)

small onion, chopped (1/4 cup)
1/3
cup grated Parmesan cheese
1/4
cup Bisquick Heart Smart® mix
1/2
cup fat-free (skim) milk
1/2
cup fat-free egg product or 2 eggs, beaten
1/4
teaspoon salt
Dash pepper
  • 1 Heat oven to 400°F. Lightly spray 9x5-inch (1 1/2-quart) glass loaf dish with cooking spray. Sprinkle zucchini, tomato, onion and cheese in dish.
  • 2 In medium bowl, stir remaining ingredients with fork or whisk until blended. Pour over vegetables and cheese.
  • 3 Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.
