Ingredients

1/2
cup chopped zucchini
1/2
cup chopped tomato
1/2
cup chopped onion
2
tablespoons grated Parmesan cheese
1/4
cup Bisquick Heart Smart® mix
1/2
cup fat-free (skim) milk
1/4
cup fat-free egg product or 2 egg whites
1/4
teaspoon salt
Dash pepper

Directions

  • 1 Heat oven to 400ºF. Spray 8x4-inch loaf pan with cooking spray. Sprinkle zucchini, tomato, onion and cheese in pan.
  • 2 In small bowl, stir remaining ingredients until blended. Pour over vegetables and cheese.
  • 3 Bake uncovered about 33 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

Great starter recipe. I saute' the onions,roasted red peppers, garlic,a grated carrot, handful of spinach and sundried tomatoes till soft. This also adds more flavor. I also use 3 eggs with yolks. My family loves this for Sunday brunch.

Just made it for our breakfast this morning. I would say it needs a little more flavor. My husband and I decided next time we would add some chopped up ham and shredded smart potatos. Also not crazy about parmenson cheese. I'd change that to cheddar. I'm adding calories but I bet it would be good!

I have made this several times and we like it very much. I used the regular subsitute eggs instead of the whites, easy to make and it can bake while you get other things ready for your breakfast or brunch.
