This may look a little bland, but is super tasty! The spices on the chicken create a nice brown sauce that can be poured over the spinach and the chicken, so this does not all taste like "health food" although it is indeed a healthy meal. I used two huge breasts and pounded them down or they would have taken too long to cook, so I needed at least twice as much seasoning as listed. I also used minced garlic from a jar, so I had more of a wet rub, which I applied to both sides of the chicken before it went in the pan. The tomato slices need to be fairly thin or they won't cook; I threw a few thick slices into the juices in the pan and let them cook that way.
