Ingredients

ounces uncooked fettuccine
1
cup broccoli flowerets
1/2
cup 1/4-inch strips carrot
1
teaspoon olive or vegetable oil
1/2
pound boneless skinless chicken breast halves, cut into 1/2-inch strips
1
garlic clove, finely chopped
1/3
cup ranch dressing
2
tablespoons grated Parmesan cheese
1
teaspoon shredded fresh basil leaves or 1/8 teaspoon dried basil leaves

Directions

  • 1 Cook and drain fettuccine as directed on package--except add broccoli and carrot 1 minute before fettuccini is done.
  • 2 While fettucine is cooking, heat oil in 10-inch nonstick skillet over medium-high heat. Cook chicken and garlic in oil 2 to 3 minutes, stirring frequently, until chicken is no longer pink in center; remove from heat.
  • 3 Stir dressing, cheese and basil into chicken. Toss with fettucine and vegetables.

Enhancing the flavor without additional fat was what drew me to try this one, but, I'll remake it often because it was awesome and super easy! I ended up using thin spaghetti broken in 1" pieces (not fettuccine) and added a half cup more matchstick carrots (1 cup total). Remarkable combination of yummy ingredients; didn't even miss the more traditional heavier cream. Try it!

I doubled this recipe and used frozen stir fry veggies for even more convenience and variety, and my family loved it and it kept well and my husband took it to work for lunch for two more days! Great recipe!

This Chicken dish was a very good one. My husband does not like chicken that much so I try different reciepes with it so he will at least try it. When it was made he told me it was a keeper except to add tomatoes in it sometime either at the end or right before it is done I give it a five
