I moved to Beijing a few months ago and in my homesick state I decided to make my mom's chicken and dumplings, which is based off of this recipe. Since I have to travel 30 min. by taxi to get to the nearest imported food store, I called my mom to see if I could substitute anything. I didn't have cream of chicken soup or the bisquick. She said she uses neither! Here's what she told me to do: For the cream of chicken I used ca. 1 1/2 cups chicken stock, 1 1/2 cups milk, 2(ish) TBS flour, and some chicken boullion. This replaced both the canned soup and milk in this recipe. For the bisquick I made my mom's biscuit recipe: 1 c. self rising flour, 1 tbs butter or shortening, and milk. Cut butter/shortening into the flour then add milk until dough forms and breaks away from the side of the bowl. If it gets too wet, just add a little more flour..no biggie! I also made my own stock and used the chicken from the stock for this recipe. The chicken was perfect and practically fell off the bones! My boyfriend and I were licking our bowls. Tasted just like home! I gave it 4 stars because I changed so much, but I'm sure this would be equally as delicious! :)

I hv bn using the "original" Bisquick recipe from the box for years but unlike these recipes, I boil the chicken, which I cut into bite-size pieces, with the veggies (onion & shredded carrots) to make the broth; therefore, the broth is already hot. I have no problem with the dumplings getting done after cooking 10 mins uncovered then 10 mins covered. I do add chicken seasoning to the dough when making the dumplings for more flavor. A family hit on a cold winter night.

I grew up on this recipe and can't get enough of it. My family loves it. I use canned veggies when I don't have frozen and always use canned cooked chiken to speed up the total prep/cooking time.

Nice, easy and simple recipe, I just substituted the Bake mix for refrigerated biscuit dough, turned the heat up the last 6 min or so to medium to completely cook the dumplings all the way through. It was a big hit and my family loved it.

This was very tasty and in deed easy to make. I will make it again, however I agree with the other comments regarding the level of heat to cook it on. I had to turn my heat up on high in order to gett the dumplings to cook.

I have tried to make chicken and dumplings before and failed miserably. When I saw this recipe, it looked so easy, I thought I would give it a try tonight. It came out wonderfully! I took the advice of some of the previous reviewers and I did sweat a diced onion in the pot before adding the rest of the ingredients. I also substituted chicken broth for milk when mixing the bisquick mix and used cream of chicken, b/c I did not have the cream of chicken/mushroom version in my pantry. Also, I, "flipped" the dumplings midway through to make sure that the top part would be cooked all the way and this method worked very well for me, since I read in the other reviews that some ppl said that it took longer than they thought to cook the dumplings. I made it in a enameled cast iron pot, so I think that it also held the heat in better than a regular stainless steel pot, even on low it was pretty hot. This recipe was a big hit with my family and they have already told me they want to have it again. My children are very picky, so this is definitely a keeper and I am so impressed that something so easy to make came out tasting so fantastic.

Delicious and easy!!! My husband and I loved it. I have to agree with Madzander007 about defining the low heat. I did exactly as suggested and it turned out fantastic. Next time I'm thinking about adding cheese.

This was awesome!! Need to define low heat though, i cooked uncovered 10 min and covered 10 min on 2 and the dumplings were not done kicked it up to a hair over 3 and let cook another 6 min.. they were perfect!! Next time celery!

Great Recipe!! Super quick, very easy, and DELICIOUS! I added a medium onion in with the chicken and sweated it before the veggies were added. Gave an extra richness and depth to the flavor. Could use an extra pinch of salt, but otherwise, was a fabulous dinner :)

This was a simple and fast way to make a good meal for my family. easy enough that my 10year old son made it with my supervision. He said it was fun and taste great. I would recommend this recipe for anyone
