tablespoons butter or margarine

cup shredded carrot

cup chopped onion (1 medium)

tablespoons Gold Medal® all-purpose flour

jar (15 oz) Old El Paso® Cheese 'n Salsa dip

cups Progresso® chicken broth (from 32-oz carton)

box (9 oz) Green Giant® frozen broccoli cuts, thawed, larger pieces cut in half

cup milk

  • 1 In 3-quart saucepan, melt butter over medium heat. Add carrot and onion; cook, stirring occasionally, until tender.
  • 2 Sprinkle flour over vegetables; stir to blend. Stir in remaining ingredients until well blended. Cook over medium heat, stirring constantly, until thoroughly heated.

This looked so good UNTIL I read the sodium content, Way too many of the soups are much too high in sodium. Have pity on those of us who MUST limit our sodium PLEASE Make us (;>) not (:>(

I can never find enough good dishes to fix fast but this one was great! I too added a little bell pepper for my husband. He took for lunch twice and raved about it!

I just made this recipe and i added half a green pepper as well as some broccoli slaw, which contains carrots and broccoli stalks and red cabbage all shredded up and it makes for a good bite and really increases the vegetable content! It is so delicious!
