Easy Beans and Frank Soup

Ingredients

  • 1 can (28 ounces) baked beans with bacon and brown sugar sauce, undrained
  • 1 can (11 1/2 ounces) eight-vegetable juice
  • 6 franks or hot dogs, cut into 1-inch slices
  • 3 medium carrots, chopped (1 1/2 cups)
  • 1 large onion, chopped (1 cup)
  • 1 clove garlic, finely chopped
  • 1 teaspoon Worcestershire sauce

    Mix all ingredients in 3 1/2- to 6-quart slow cooker.

    Cover and cook on low heat setting 6 to 8 hours (or high heat setting 3 to 4 hours) or until carrots are tender.

  • The eight-vegetable juice adds a nice spicy flavor to this easy-to-make soup. For an all-family-appeal soup, however, you may want to use tomato juice instead of the eight-vegetable juice.
  • For a super-easy and nutritious meal, serve this protein-packed soup with crisp carrot and celery sticks, and pass a bowl of bright red apples for dessert.
  • Add a little fun by sprinkling shredded mozzarella cheese on top of each bowl of hot soup. The kids will love the way it "strings" when they spoon into it. Or top with a slice of process American cheese or some shredded Cheddar cheese-it won't string, but it will add flavor.
