Easy Apple Cake

Relish this apple, walnuts, cinnamon cake served warm with ice cream – a delicious baked dessert.

Ingredients

cup butter, softened
1
cup sugar
2
eggs
1/4
teaspoon vanilla
1 1/4
cups all-purpose flour
1
teaspoon baking soda
1
teaspoon ground cinnamon
1/4
teaspoon salt
1 1/2
cups shredded peeled apples (about 2 medium apples)
1/2
cup chopped walnuts
1
quart vanilla or cinnamon ice cream

Directions

  • 1 Heat oven to 350°F. Spray 9-inch round cake pan with baking spray with flour.
  • 2 In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, flour, baking soda, cinnamon and salt. Stir in apples and walnuts. Spoon into pan.
  • 3 Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool 10 minutes longer. Serve warm with ice cream.

This was my first time trying this recipe but it definitely won't be my last. This cake was a big hit in my house. Moist with light flavors I really enjoyed this cake.

I have made this recipe twice and everyone loved it. The cake is tasty and fluffy. First time I didn´t have enough pecans, so I added some sliced almonds, also, I used pumpkin pie mix spice instead and it came out great!!

This is a very good apple cake recipe. Moist and delicious. I like my cakes that have fruit in them to be on the chunkier side, so instead of shredding the apples, I sliced them still thin, but not too thin so you can still see the chunks of apple. I halved the cinnamon and replaced the missing half with apple pie spice, I think it gave it a little something extra. I was pleased with the result. I will definitely keep this recipe on file and use it again and again. I will play with it a little bit though. Replace the butter with applesauce, try out different kinds of apples, I think I'll even add raisins next time. I think apples and raisins go very well together. Plus raisins and cinnamon are a great combo as well. The cake surprisingly isn't too sweet, I thought with the cup of sugar and the apples I used which were already sweet would have made it that way, but it was perfect. Happy baking to you all, I highly recommend people try this. (:
