I found instead of coconut use the edible grass that you can find this time of the year at JoAnn Fabrics

Instead of using oil try using applesauce this makes for a much better tasting cake. It is so moist and also heart healthy. Vicki,RMA

This was pretty good. I should have put the cake in the refrigerator after I frosted it and then did the fork marks. I tried doing the basket weave after I frosed it and it looked horrible, so I just smoothed it out!

I had some trouble with the cake as it is "Super Moist" and it was hard to frost the middle. I let it sit outside in the sun/breeze for about an hour before I frosted the top of it. That helped a lot. Next time I might freeze the cakes for awhile before starting the decorating. Other than that I am more than impressed with this cake. I made a handle out of foil and put tooth picks in the ends. Then I cut strips of Easter coloured paper and wrapped it around from one end to the other. I also put extra coconut around the plate and some more eggs and jelly beans. SO CUTE!!!

i made this cake twice for easter and everyone LOVED it! since i knew a lot of people don''t like coconut, i mixed up a buttercream frosting and dyed it green and used that instead of the coconut. it was adorable!

This was a really fun cake to make and just in time for the Easter holiday! However; I had difficulty making my basket weave pattern as neat as theirs. Also, smaller jelly beans can be used instead of the larger eggs. This makes it easier to transport.

I made this the last couple of years for the our family Easter parties and it had great raves. My youngest daughter made last year and found it easy to make. So much so that she made two one for the family and one for a school party. Keep up the job....we love it.
