Ingredients

pouch (1 lb 1.5 oz) Betty Crocker® double chocolate chunk cookie mix
1/4
cup vegetable oil
2
tablespoons water
1
egg
1/2
tub (16-ounce size) Betty Crocker® Rich & Creamy chocolate ready-to-spread frosting (1 cup)
1/3
cup miniature marshmallow
1
tablespoon chopped peanuts, if desired

Directions

  • 1 Heat oven to 350ºF. Stir cookie mix, oil, water and egg in medium bowl with spoon until dough forms. Press in ungreased square pan, 8x8x2 inches.
  • 2 Bake 20 to 25 minutes or just until set. Cool completely, about 30 minutes.
  • 3 Stir together frosting and marshmallows; spread over bars. Sprinkle with peanuts. For 16 bars, cut into 4 rows by 4 rows. Store tightly covered.

Expert Tips

To easily remove and cut bars, line pan with aluminum foil, leaving about 2 inches of foil hanging over edges of pan. Press dough into pan. After baking and cooling, lift by edges of foil to remove and cut.

These are the best. I pass them off as brownies and everyone loves them. They are really to prepare. The best tip is to use the foil lined pan.

the store i went to for the ingredients for this recipe didnt carry the specified cookie mix, so i bought brownie mix pouches instead. in my house, there are always extra people over so i doubled all the ingredients and baked it in a standard cake pan. the results were delicous even though i didnt follow the recipe completly...when i mentioned to my mother that it was supposed to be made with cookie mix, her reply was, "well i dont know how they could be any better that way!" and my 18 year old brother said, "theyre the bomb". try the recipe with the brownie mix and be the hero of your household :)

My children are always looking for some way to eat smores without going camping. These rocky road bars take the cake. They may not be smores but they have marshmellows and chcolate, any child loves those two tegether.
