Double-Quick Dinner Rolls

Ingredients

2 1/4
cups Gold Medal® all-purpose or unbleached flour
2
tablespoons sugar
1
teaspoon salt
1
package regular or quick active dry yeast
1
cup very warm water (120°F to 130°F)
2
tablespoons shortening
1
egg

  • 1 Mix 1 1/4 cups of the flour, the sugar, salt and yeast in large bowl. Add water, shortening and egg; beat with spoon until smooth. Stir in remaining flour until smooth. Scrape batter from side of bowl. Cover and let rise in warm place about 30 minutes or until double.
  • 2 Grease 12 regular-size muffin cups. Stir down batter by beating about 25 strokes. Spoon into muffin cups. Let rise 20 to 30 minutes or until batter rounds over tops of cups.
  • 3 Heat oven to 400ºF. Bake 15 to 20 minutes or until golden brown.

These were great, super quick and easy to make! My husband said they tasted better than bakery rolls. My kids loved them but since I made them in a muffin pan they thought they had too much "crust" and only ate the insides. I would definitely use this recipe again but bake it in a loaf pan for less crust. Also, it helps to put them somewhere really warm to rise, mine weren't rising because I live where it's cold so I put the pan in front of where my oven vents (not too close) while I was preheating and they doubled in size right away.

Not good at all. I see why so many reviews said they added more sugar to the recipe. These have the consistancy of muffins, not bread. Quite disappointing. I won't be using this recipe again.

Very easy for last-minute rolls! Mine took about 10-11 minutes to get done in the oven, and they were sooo soft! Yum! I love fresh baked bread!
