Ingredients

box Betty Crocker® SuperMoist® chocolate fudge cake mix
Water, vegetable oil and eggs called for on cake mix box
1
tablespoon instant espresso coffee powder, granules or crystals
1/2
teaspoon ground cinnamon
4
oz semisweet baking chocolate, chopped
1
container Betty Crocker® Rich & Creamy dark chocolate frosting
2
teaspoons instant espresso coffee powder, granules or crystals

  • 1 Heat oven to 350°F (325°F for dark or nonstick pans). Make, bake and cool cake as directed on box for two 8- or 9-inch rounds--except add 1 tablespoon espresso and the cinnamon with the eggs, and stir in the chocolate just before pouring into pans.
  • 2 To make glaze, spoon frosting into small microwavable bowl. Microwave uncovered on High 15 to 30 seconds or until slightly melted. Stir in 2 teaspoons coffee until blended.
  • 3 Place 1 cake layer, rounded side down, on serving plate. Carefully spread almost half the glaze to edge of layer, allowing some to drip down side. Top with second layer, rounded side up. Carefully spread remaining glaze to edge of top layer, allowing some to drip down side. Store loosely covered.

Make photo holders to insert into the cake and display special photos. Use 9-inch pieces of 18-gauge florist’s wire, shaping one end into a circle.

Microwave 1 oz white chocolate baking bar and 1/2 teaspoon vegetable oil on High about 30 seconds or until melted. Pour into a small resealable food-storage plastic bag; seal the bag, and cut off a corner. Drizzle over the cake, or use to write a special message.

Make a 13x9-inch cake instead of a layer cake. Bake and cool cake as directed on box for 13x9-inch pan.

I made this for a friend at work on her birthday. It was a hit, by the end of lunch there was only one piece left. I couldn't find instant espresso mix so I used instant coffee and added a little more than the 2 tsp. I also added a package of cream cheese to the frosting.

I made it for my mother in-laws birthday because I know how much she likes cappuccino/espresso. I had to substitute the espresso powder (which I never heard of) for FINELY ground espresso from Starbucks. I was a little concerned that it might end up gritty but it didn't. It tasted great! I work at a Salon and the employees and customers all loved it and wanted the recipe. The cake was gone by the end of the day. If I would change anything I would have added more espresso to the cake. I could taste it more in the icing then the cake itself. The semi sweetened crushed chocolate was really good because you could taste little chocolate chunks throughout the cake. Very Good!

This was so easy to make and so very very good! I didn't have espresso powder so I used a little extra decaf instant coffee. And I just used chocolate chips instead of chopped up bars. If serving cold pop a slice in the microwave for about 10 seconds and all that goodness is multiplied.
