Double-Cheese Pepperoni Pizza

Ingredients

cups Original Bisquick® mix
2/3
cup very hot water
2
tablespoons vegetable oil
4
smoked string cheese pieces (from 4- or 8-oz package), cut lengthwise in half
1/4
cup Italian-style tomato paste
1
small onion, cut lengthwise in half, then cut crosswise into thin slices
1/2
medium bell pepper, thinly sliced
1
can (4 oz) Green Giant® mushroom pieces and stems, drained
1/2
package (3.5-oz size) sliced pepperoni
1
can (2 1/4 oz) sliced ripe olives, drained, if desired
2
cups shredded mozzarella cheese (8 oz)

  • 1 In large bowl, stir Bisquick mix, water and oil until soft dough forms; beat vigorously 20 strokes. Let stand 8 minutes.
  • 2 Move oven rack to lowest position. Heat oven to 450°F. Grease 12-inch pizza pan with shortening or cooking spray. Press dough on bottom and 1 inch over side of pizza pan. Place string cheese along edge of dough. Fold 1 inch edge of dough over and around cheese; press to seal. Bake 7 minutes.
  • 3 Spread tomato paste over crust. Top with onion, bell pepper, mushrooms, pepperoni and olives. Sprinkle with mozzarella cheese. Bake 8 to 10 minutes or until crust is golden brown and cheese is melted.

Short on time? Omit the string cheese, and press the dough just on the bottom of the pizza pan, not over the side.

Serve this special pizza just like pizzerias do by providing containers of grated Parmesan cheese and crushed red pepper flakes for sprinkling on pizza as desired.

Does anyone know if I can substitute the Original Bisquick for the Gluten-Free Bisquick mix? I really don't want to have to buy 5 different kinds of flour for the Betty Crocker GF Pizza dough recipe.

Wow! What a great pizza. Kids and adults and seniors gobbled down this pizza like they hadn't eaten in weeks! I didn't have marinara sauce to use as a dip so took some sour cream, added a can of diced tomatoes (drained, of course) to the sour cream and added a "dollop" of sour cream/tomato dip on the plate beside the pizza slice for each person. I made 5 pizza for 10 people (including children. I should have made 10 pizzas....everyone wanted the recipe which I quickly ran off for them on my printer. Thanks! This is just too easy and sooooooooooooooooo good!

I love this recipe!!! It's so biscuit-like, but delicous. I didn't have any of the ingrediants for the topping, so I used cheddar cheese,tomato basil pesto, ground beef, and sliced cherrie tomatos... AWESOME...thanks! oh, one last thing, it was a little dry, so do less bisquick!
