Dried banana chips pump up the flavor in and on top of this bread. The crunchy banana-cereal topping is a bonus.

Made a few substitutions. Replaced sugar with 1/2 cup sugarblend, substituted 1/4 cup oil with 1/8 cup oil and 1/8 cup applesauce, didn't have buttermilk so made sour milk (added 2 Tbl vinegar to milk. Substituted 1 cup flour with 1 cup oat flour. Didn't have banana chips so I used dried blueberries. Didn't have enough Curves cereal so I substituted Special K cinnamon pecan cereal and to finish off before baking, sprinkled crushed Special K on top. By using the substitutions, cut down on fat and calories.
