I have not made this yet because I have a question. One cook said she makes 2 so she can freeze one - if you freeze do you freeze prior to cooking or after cooking? I have to give it a spoon because it won't let me post without. Could someone answer about the freezing? thanks

I am a single mom with 4 kids..one teenager, 6, 5, and 2..amazingly they all agree on the meatloaf but I hated normal just plain yucky meatloaf...then I made this recipe I followed it to the T except I didnt have any sage and I loved it..I tried it with bread crumbs and then again with ripped up bread..i like the bread better and when I make this I put about a quarter of ground turkey n it and my kids dont even know..its easy so I always make 2 so I can freeze one so on a night I dont want to cook or I am too tierd I can just take it out and thats dinner...

This was the first meatloaf I've made in almost 3 years, so I was really hesitant. The recipe sounded ridiculously easy, so I went for it! I was not disappointed :). I made some changes, as we all do. I added a Cajun seasoning to the mix, more black pepper (no measuring was done there), and nixed the sage. I also doubled the recipe because we had already taken out 2 pounds of ground beef for dinner (and in turn doubled all of the ingredients, again, not measuring spices, though). I used four cloves of garlic (only if you love garlic!) and 1/2 of a medium-sized onion. I will say that it was a little too much onion for my taste, but the boyfriend loved it. I used wheat bread (it didn't specify) and also mixed ketchup and barbecue sauce for the glaze. I used really lean meat, but there was still juice and some grease that bubbles up around the sides. I removed it from the glass baking dish after about 2 minutes because I didn't want it soaking up the grease. It made a great meal + leftovers! (We served it with au gratin potatoes.)

This meatloaf was really good. My husband likes gravy instead of ketchup or BBQ so I used gravy instead and it came out great! Good with mashed potatoes and corn.

Made this last night...my wife really liked it. Our son dropped by around 11 AM and managed to make two sandwiches out of the leftovers, raving about the best meat loaf he had ever eaten. It was just what I was after a firm meat loaf with great taste. The only thing that I did different was in the bread...I used three slices (2 inner slices and 1 toe) of New York Style Soft Rye... My wife already says to make more soon!
