Deviled Green Goblin Eggs

Betty Crocker® Potato Buds® mashed potatoes mixture sandwiched between egg halves for deviled Halloween appetizers.

unpeeled hard-cooked eggs

cups hot water

bottle (0.3 oz) yellow liquid food color

bottle (0.3 oz-size) blue liquid food color

bottle (0.3 oz-size) green liquid food color

tablespoons cider vinegar

cup Betty Crocker™ Potato Buds™ mashed potatoes (dry)

cup mayonnaise
1/2
cup sour cream
1/4
cup chopped fresh chives
1/2
teaspoon salt
1/2
teaspoon seasoned pepper blend
  • 1 Gently tap each egg on countertop until shell is finely crackled. In large bowl, stir together hot water, food colors and vinegar. Add eggs; let stand 1 hour.
  • 2 Remove eggs from water and drain on paper towels. Peel eggs to reveal pattern on whites. Cut eggs lengthwise in half; slip out yolks into medium bowl. Mash yolks. Add potatoes (dry), mayonnaise, sour cream, chives, salt and seasoned pepper blend; mix well.
  • 3 Spoon egg yolk mixture evenly into egg white halves. Gently press 2 halves together. Repeat with remaining halves. Serve immediately or refrigerate until serving time.

Instant mashed potato flakes add volume to deviled eggs and keep them from watering out if made ahead.
