Enjoy this flavorful salad packed with turkey, macaroni and lettuce – an elegant side dish!
cups uncooked elbow macaroni (6 ounces)
package (10 ounces) frozen green peas
cup mayonnaise or salad dressing
teaspoons curry powder
cups cut-up cooked turkey breast
cup shredded Cheddar cheese (2 ounces)
medium green onions, sliced (1/2 cup)
medium stalk celery, sliced (1/2 cup)
Lettuce leaves, if desired
Cook and drain macaroni as directed on package. Rinse with cold water; drain. Rinse frozen peas with cold water to separate; drain.
Mix mayonnaise and curry powder in large bowl. Stir in macaroni, peas and remaining ingredients except lettuce. Cover and refrigerate 2 to 4 hours to blend flavors. Serve on lettuce.
For a tangier salad, omit the peas and add 1 can (5 1/2 ounces) pineapple tidbits, drained.
Serve this salad with crusty whole-grain rolls and a fresh-fruit salad. For dessert, top your favorite brownies with a scoop of coffee ice cream.
