Curried Pumpkin-Vegetable Soup

medium onion, chopped (1/2 cup)

clove garlic, minced

cups Green Giant® frozen mixed vegetables (from 1-lb bag)

can (15 oz) pumpkin

can (14.5 oz) diced tomatoes, undrained

can (14 oz) fat-free chicken broth with 33% less sodium
1/2
cup water
1/2
teaspoon sugar
1 1/2
teaspoons curry powder
1
teaspoon paprika

  • 1 In 3-quart saucepan, heat oil over medium-high heat. Add onion and garlic; cook 1 to 2 minutes, stirring frequently, until onion is crisp-tender.
  • 2 Stir in all remaining ingredients. Heat to boiling. Reduce heat to low; cover and simmer 10 to 12 minutes, stirring occasionally, until vegetables are tender. If desired, season to taste with pepper.

Made a double batch of this and made a cpl changes and it was BOMB! I put the seasonings (added a teaspoon of cinnamon) in with the onion n garlic first... Then only added ONE can of broth and NO water. Also added 1 lb ground turkey and one can (drained thouroly)of white beans, so it came out almost chili like. It was Amazing, my family loved it

I thought this was very good and easy. I did use an extra teaspoon of curry powder and bloomed the curry and paprika with the sauteed onions before adding the other ingredients. Would I make this again? Definitely.
