Ingredients

cup dried lentils, sorted and rinsed

cups fat-free vegetable or chicken broth

teaspoon curry powder
3
cloves garlic, finely chopped
3/4
cup uncooked quick-cooking barley
1
bag (1 pound) frozen corn, green peas and carrots (or other combination)
1
cup crumbled feta cheese (2 ounces)

  • 1 Heat lentils, broth, curry powder and garlic to boiling in 3-quart saucepan; reduce heat. Cover and simmer 30 minutes, stirring occasionally.
  • 2 Stir in barley and frozen vegetables. Heat to boiling; reduce heat. Cover and simmer 10 to 15 minutes, stirring occasionally, until lentils and barley are tender and liquid is absorbed. Sprinkle with cheese.

This is a great recipe. I used already cooked lentils and regular barley. Instead of cooking the lentils in step 1, I added the barley. I then added the lentils in Step 2. I also adjusted the curry to 2 tsp. I think it would have been a bit bland without the extra curry. I also didn't use the feta and it was still quite tasty. I would definately recommend this for people who like lentils and barley. It was great as a main course and later as a side.
