tablespoons reduced-fat mayonnaise or salad dressing

tablespoons sliced celery

tablespoon chopped peanuts

slices raisin bread, toasted, if desired
  1. In small bowl, mix all ingredients except lettuce and bread.
  2. Place lettuce on 2 bread slices. Spoon and spread about 1/2 cup chicken mixture onto each. Top with remaining bread.
