cup diced deli rotisserie chicken (from 2-lb chicken)

red apple, coarsely chopped (about 3/4 cup)

cup diced celery

cups finely shredded lettuce

fresh parsley leaves
  1. In medium bowl, combine mayonnaise and curry paste.
  2. Stir in remaining ingredients except lettuce and parsley.
  3. Place about 1 cup lettuce in each of 6 martini glasses. Spoon 1/3 cup chicken mixture over lettuce in each glass.
  4. Garnish with parsley.
