Curried Chicken and Grape Salad

This deli favorite is easy to make; just add curry and lemon juice to mayonnaise, then blend with cooked chicken, grapes, and crunchy celery.

Ingredients

Dressing

1/2
cup mayonnaise or salad dressing

tablespoons lemon juice

to 3 teaspoons curry powder
1/2
teaspoon salt
1/4
teaspoon pepper

Salad

cups diced deli rotisserie chicken (from 2- to 2 1/2-lb chicken)

cup thinly sliced celery

cup seedless red grapes, halved
3
tablespoons slivered almonds, toasted

Directions

  • 1 In large bowl, stir dressing ingredients until well mixed.
  • 2 Fold in chicken, celery and grapes. Sprinkle with almonds.

Expert Tips

You may find several types of curry powder in your grocery store, but the most common blends are labeled either curry powder (mild) or Madras curry powder (a bit hotter).

You can use cooked chicken from the deli, cut into cubes, or frozen (thawed) diced cooked chicken instead of the rotisserie chicken.
