Curried Caribbean Pork Pasta

Ingredients

  • 1 pound ground pork
  • 1 clove garlic, finely chopped
  • 1/2 cup mayonnaise or salad dressing
  • 1/2 cup plain yogurt
  • 1/4 cup frozen (thawed) orange juice concentrate
  • 2 1/2 teaspoons curry powder
  • 1 can (8 ounces) pineapple chunks in juice, drained and 2 tablespoons juice reserved
  • 4 medium green onions, sliced (1/4 cup)
  • 2 cups uncooked farfalle (bow-tie) pasta (4 ounces)
  • 1 small red bell pepper, cut into 1-inch pieces
  • 1 can (11 ounces) mandarin orange segments, drained
  • 1/4 cup coconut, toasted*

    Cook pork and garlic in 10-inch skillet over medium-high heat, stirring occasionally, until pork is no longer pink; drain. Stir in mayonnaise, yogurt, juice concentrate, curry powder and reserved pineapple juice. Stir in pineapple and onions. Cook, stirring frequently, until hot.

    Cook and drain pasta as directed on package, adding bell pepper for the last 4 minutes of cooking. Toss pasta, bell pepper and pork mixture. Toss with orange segments. Sprinkle with coconut.

  • *To toast coconut, bake uncovered in ungreased shallow pan in 350¦ oven 5 to 7 minutes, stirring occasionally, until golden brown. Or cook in ungreased heavy skillet over medium-low heat 6 to 14 minutes, stirring frequently until browning begins, then stirring constantly until golden brown.
  • Not all curries are the same; some are hot, and others may be mild. Tandoori, sate, maharajah and sweet curry are some of the varieties of curry that are extremely flavorful, without being hot. In contrast, hot curry and vindaloo really turn up the heat in your cooking.
  • If you want to make this dish extra special, top it with chutney and raisins in addition to the coconut.
