EXPERT TIPS

Expert Tips

*To toast coconut, bake uncovered in ungreased shallow pan in 350¦ oven 5 to 7 minutes, stirring occasionally, until golden brown. Or cook in ungreased heavy skillet over medium-low heat 6 to 14 minutes, stirring frequently until browning begins, then stirring constantly until golden brown.

Not all curries are the same; some are hot, and others may be mild. Tandoori, sate, maharajah and sweet curry are some of the varieties of curry that are extremely flavorful, without being hot. In contrast, hot curry and vindaloo really turn up the heat in your cooking.

If you want to make this dish extra special, top it with chutney and raisins in addition to the coconut.
