These came out great! I found if you fill up the mini muffin cup a little more than the tops are easier to cut off. I just used regular canned frosting for the inside. All the leftover bottoms I used to make cake balls. I crumbled up the bottoms in a bowl added frosting then rolled them into balls and stuck in the fridge a few hours to set. I melted purple candy melts that I had and then rolled the cake balls in them. Great way to not waste the bottoms.

Made these in "mini" muffin pans--way too small to cut so I just stuck two together with the frosting. Perhaps regular size cupcakes would have worked better. Idea is great and flavor was good--just too much trouble and too small to get the perfect result shown in the picture. I made them red, white and blue for Memorial Day. Those who hadn't seen the picture said they were great! I will definitely try them again with a little tweeking on the size.

I had so much fun with these delightful treats!! I made them for my husband to take to work...BIG HIT!!! I decided to put them on my Pinterest page.....I NEVER imagined how many people saw them on my Pinterest and pinned the recipe...when I pinnned it on my Jan Bigelow site!!!.

I made these with a chocolate cake mix , so I didn't color them. Just wanted to practice baking the mini cupcakes and cutting, and filling them. I'm planning to make red, and blue for the Fourth of July. Will try the suggestion about using the dram of liquid chocolate. I also used canned BC whipped fluffy white frosting for my filling. It was fantastic! Don't be timid about filling them. I was and my first ones were skimpy. Load 'em up! Look at the recipe for Team Color Poppers for more hints.

yes you can use chocolate cake to make the poppers. but heres an idea, go the candy supply store and buy liquid chocolate hard candy flavoring and add 2-1 dram bottles to the cake mix. you will be suprised to see the white cake mix will taste just like chocolate and be different colors from your food coloring.

OMG!! Fun to make, love the bright colors for spring and summer events. No waste with me, I use the bottoms the same as I do the tops of the cupcakes, tops to tops and bottoms to bottoms. Mix and match the Cupcake Poppers,I use white frosting and light pink top with darker pink top. I have done Whoopie Pies using light colors, works great. What ever two different colors look good to you and cream cheese frosting is really good.

Very cute! I think would try a meringue or even regular butter-cream instead and wouldn't bother coloring the frosting either.
