Cumin Roasted Sweet Potatoes

Ingredients

  • 6 medium sweet potatoes, peeled, cut into cubes
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

Steps

    Heat oven to 375°F. Line 15x10x1-inch pan with foil or cooking parchment paper.

    In large bowl, toss all ingredients until potatoes are coated with seasoning. Spread potatoes in single layer in pan.

    Roast uncovered 30 to 40 minutes, stirring once, until potatoes are tender and golden brown.

  • Not a fan of sweet potatoes? Try Yukon Gold potatoes instead.
  • Cumin adds a smoky flavor. For a sweeter version, substitute ground cinnamon.
