Crunch-Topped Apple-Spice Cake

cup boiling water

medium unpeeled cooking apples, chopped (2 cups)
1 1/4
cups packed brown sugar

cup Gold Medal® all-purpose flour
1
cup Gold Medal® whole wheat flour
1/3
cup canola oil
1
teaspoon baking soda
1
teaspoon ground cinnamon
1
teaspoon vanilla
1/2
teaspoon ground cloves
1/4
teaspoon salt
3
eggs
1/3
cup finely chopped nuts
2
tablespoons packed brown sugar

  • 1 Heat oven to 350°F. Spray 13x9-inch pan with cooking spray; sprinkle with flour.
  • 2 In large bowl, pour boiling water over apples. Add remaining ingredients except nuts and brown sugar. Beat with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • 3 In small bowl, mix nuts and 2 tablespoons brown sugar; sprinkle over batter.
  • 4 Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
