Crunch-Topped Apple-Spice Cake

Ingredients

  • 1/3 cup boiling water
  • 2 medium unpeeled cooking apples, chopped (2 cups)
  • 1 1/4 cups packed brown sugar
  • 1 cup Gold Medal™ all-purpose flour
  • 1 cup Gold Medal™ whole wheat flour
  • 1/3 cup canola oil
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3 eggs
  • 1/3 cup finely chopped nuts
  • 2 tablespoons packed brown sugar

    Heat oven to 350°F. Spray 13x9-inch pan with cooking spray; sprinkle with flour.

    In large bowl, pour boiling water over apples. Add remaining ingredients except nuts and brown sugar. Beat with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.

    In small bowl, mix nuts and 2 tablespoons brown sugar; sprinkle over batter.

    Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.

  • Many traditional recipes for apple cake call for the nuts to be stirred into the batter. By replacing a larger amount of stirred-in nuts with the nut topping in this recipe, you'll get maximum flavor with a lot less fat.
