Ingredients

cup ranch dressing
3/4
cup crisp wheat cracker crumbs
1
tablespoon chopped fresh thyme leaves or 1 teaspoon dried thyme leaves
1
teaspoon paprika
4
boneless skinless chicken breast halves (1 pound)

Directions

  • 1 Heat oven to 425°F. Spray rack of broiler pan or baking dish with cooking spray. Pour dressing into small bowl. Mix cracker crumbs, thyme and paprika in another small bowl or plastic bag. Dip chicken into dressing, then coat with crumb mixture. Place on rack in broiler pan.
  • 2 Bake uncovered 35 to 40 minutes or until golden brown and juice is no longer pink when centers of thickest pieces are cut. Cover and refrigerate 2 cooked chicken breast halves to use for Curry Chicken Pie.

Very tasty. Not so easy to make because the ranch doesn't hold together the wheat cracker crumbs onto the chicken. I used the wheatables crackers instead of saltine wheat crackers for a better flavor. I had to make the ingredients double because my chicken was too big. We cut up the chicken and placed into a salad. The taste was amazing! Will try again!

I followed the recipe as directed without adding other ingredients or changing things and I would say it was disappointing but for such a simple entree I wasn't really expecting to be blown away to begin with. It was ok, but I think the breading came off very easy. I am use to using egg instead of ranch and I don't think the ranch held up as well when coating the chicken with the crackers and herbs/spices. It was an easy recipe though but I would recommend what others have done and suggest people add their own favorite spices/herbs to the breading mixture.
