Crispy Garlic-Parmesan Chicken

Chicken is coated with cheese-spiked Italian style panko crispy bread crumbs, then it's cooked until crispy and golden brown.

Ingredients

boneless skinless chicken breasts
1/4
cup butter, melted
1
pouch (9 oz) Progresso™ Recipe Starters™ creamy Parmesan basil cooking sauce
2/3
cup Progresso™ Italian style panko crispy bread crumbs
2/3
cup finely shredded Parmesan or Asiago cheese
1
box (6.6 oz) Betty Crocker™ mashed potatoes (any variety)
Water, milk and butter called for on potatoes box

  • 1 Pound chicken breasts smooth side down, gently between pieces of plastic wrap, with flat side of meat mallet or rolling pin until 1/2 inch thick.
  • 2 In shallow dish, mix melted butter and 1 tablespoon of the cooking sauce; in another shallow dish, mix bread crumbs and cheese. Dip chicken into butter mixture, then dip into bread crumb mixture to coat.
  • 3 In 12-inch nonstick skillet, heat 2 tablespoons oil over medium heat. Cook chicken in oil 12 to 15 minutes, carefully turning once, until chicken is no longer pink in center and coating is golden brown.
  • 4 Make potatoes as directed on box, using water, milk and butter. Heat remaining sauce until hot. Serve with chicken.
