Crispy Coconut-Date Cookies

Ingredients

  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • Egg and butter called for on cookie mix package
  • 1 cup lightly packed flaked coconut
  • 1 cup chopped pitted dates
  • 1/2 cup canned sweetened condensed milk (not evaporated)
  • 2 cups Whole Grain Total® cereal

Steps

    Heat oven to 350°F. Line cookie sheets with cooking parchment paper. Make cookie mix as directed on package, using egg and butter. Stir in coconut, dates and condensed milk. Gently stir in cereal. Onto cookie sheets, drop dough by tablespoonfuls 2 inches apart.

    Bake 10 to 12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheets to cooling racks. Store cooled cookies tightly covered at room temperature.

  • Keep any leftover cookies in an airtight container for up to 5 days. Freezing these cookies is not recommended, as the cereal loses its crunch.
