Creole Chicken and Orzo

Ingredients

tablespoon olive or vegetable oil

lb. chicken breast strips for stir-frying

oz. (1 cup) uncooked orzo or rosamarina (rice-shaped pasta)

(14.5-oz.) cans stewed tomatoes, undrained, cut up
1
(9-oz.) pkg. frozen baby lima beans, thawed
1
teaspoon garlic salt
1
teaspoon dried basil leaves
1/2
teaspoon hot pepper sauce

  • 1 Heat oil in 12-inch skillet over medium-high heat until hot. Add chicken; cook 3 minutes, stirring frequently.
  • 2 Stir in all remaining ingredients. Bring to a boil. Reduce heat; cover and simmer 20 to 25 minutes or until liquid is absorbed and orzo is tender, stirring occasionally.

This dish was super quick and easy! Nice flavor, my 2yr old loved it! Next time however we might add a bit more hot sauce... It didn't have quite the punch I was looking for.

This is a "keeper". Easy and very good. I used fresh tomatoes and chicken broth vs. canned tomatoes. Also increased hot sauce to 4 tsp. and basil to 1 1-2 tsp. I also added 1 tsp. garlic powder in addition to the garlic salt. Simmered an additional 15 minutes so flavors could blend more. My husband went back for thirds!
