Creamy Skillet Brussels Sprouts

Brussels sprouts are the perfect harvest vegetable to serve as a side dish. This recipe comes together in a skillet and is full of flavor!

Ingredients

lb Brussels sprouts
3
tablespoons vegetable oil
1
medium shallot, finely chopped (about 1/3 cup)
1/2
cup Progresso™ chicken broth (from 32-oz carton)
1
pouch (9 oz) Progresso™ Recipe Starters™ creamy roasted garlic with chicken stock cooking sauce
3
slices fully cooked bacon, chopped (about 1/4 cup)

  • 1 Trim Brussels sprout ends, removing outer leaves (if necessary); cut in half, and set aside.
  • 2 In 12-inch skillet, heat 1 tablespoon of the oil over medium heat. Cook shallots in oil 3 to 5 minutes or until tender. Remove from heat; transfer to small bowl.
  • 3 Add remaining 2 tablespoons oil to skillet; add Brussels sprouts. Cook 6 to 8 minutes, stirring occasionally, until Brussels sprouts turn bright green and begin to caramelize. Stir in chicken broth. Cover; cook 2 to 4 minutes or until Brussels sprouts are slightly tender.
  • 4 Add shallots and cooking sauce. Cook 2 to 3 minutes or until warmed through. Top each serving with slightly less than a tablespoon of bacon. Add salt and pepper to taste, if desired.

Using already cooked bacon takes the greasy mess out of the kitchen--easy to chop and wonderful to add for big flavor.

Brussels sprouts have a flavor similar to cabbage. Look for unblemished, bright green sprouts with compact leaves.
