Creamy Salsa Potatoes

Ingredients

boxes (4.7 oz each) Betty Crocker® scalloped potatoes
4
cups boiling water
1
cup milk
2
tablespoons margarine or butter
3/4
cup Old El Paso® Thick ‘n Chunky salsa
1/2
cup sour cream
1
can (4.5 oz) Old El Paso® chopped green chiles
1/2
cup shredded Cheddar cheese (2 oz)
2
tablespoons chopped fresh cilantro, if desired

Directions

  • 1 Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • 2 Stir 2 Sauce Mix pouches, boiling water, milk and margarine with whisk in baking dish. Stir in 2 Potatoes pouches. Stir in salsa, sour cream, chiles and cheese until well blended.
  • 3 Bake 35 minutes or until potatoes are tender. Sprinkle with cilantro. Let stand 5 minutes before serving (sauce will thicken as it stands).

This dish is FANTASTIC just how it is written! I took it to our annual 4th of July BBQ and the dish was scraped clean! Everyone loved it. I highly recommend this for your next potluck. I may even try adding the hamburger meat to make it a complete meal!

I too used fresh chopped jalapenos instead of chiles, only because I thought I had a can of chiles in my pantry, but at the last minute realized I didn't. I loved that this made a big batch. My husband took the dish to a BBQ, which I was told everyone enjoyed. I personally have not tried the dish, but I can't imagine anything with potatoes and cheese not tasting good. I plan to make this again soon and I'll be sure to have some.

This was fantastic! I added about a pound to a pound and a half of hamburger meat to make this a whole meal and it came out great! I have been trying out a bunch of different recipes lately, and I will say this one has been my favorite so far. It's very easy to make, and only takes the 30 mins in the oven. Again, this was great!! love it ;)
