Not overly impressed. I do enjoy quinoa, but this recipe did nothing for me. Will not be making this again.

LOVE this recipe! I do use more garlic and light cream cheese like other reviewers have suggested (3-4 oz instead of 2). I also use a harvest blend that has israeli style couscous, orzo, baby garbanzo beans and red quinoa. Very filling and tasty dinner option.

I just have to say... I think quinoa must be an acquired taste and I just have not acquired it yet. I kept tasting it and adding things, more cream cheese, more parmesan... nothing to me made it taste as delectable as everyone elses review says. My husband said it was okay...

This is super good! We are on a slow-carb diet and this is one of the best recipes for it. I use parmesan cheese on top and it's just great. Like others, more garlic, and a bit more cream cheese (3 oz. of the lower fat kind, Neufchatel) I also just use a bag of frozen mixed veggies and cook them longer and it's great!

Yum! I used feta instead of romano, extra garlic, zucchini and broccoli, and neufchatel cheese. It was pretty easy to make and quite healthy with all those veggies! Just a note, my veggies took much longer to cook than the two minutes it says.

This was a simple, straightforward recipe. I used about 2x the cream cheese (substituted neufchatel). In the future, I will use more garlic and basil, though. I'll definitely make this again.

This was great! Quinoa is so good and healthy. You can add so many different vegatable options to this recipe. I did not have romano cheese to add to this so we used colby jack and it was still very good

This is fabulous! I used about 2 tablespoons LIGHT cream cheese! And roasted the veggies (zucchini, red pepper, purple onion, asparagus) on 425 for 10 minutes on a jelly roll pan, stirred it, and put it back in for 7minutes added some mushrooms and sprinkled with light mozzarella cheese!

I love quinoa and was disappointed to only find 2 recipes on BC.com, but I LOVE this recipe, and so did my husband. I, too, used 3 oz. of cream cheese and I also used a little more butter and cooked the veggies for about 8 minutes (way over the 2 minutes called for) - 4 minutes uncovered, 4 minutes with tinfoil to steam them. YUM! This one is going in our rotation for sure.

Do yourself a favor and try this delicious, healthy, and easy recipe. I use 2 small zucchini, 2 large carrots, 1 medium crown of broccoli and 1 pound asparagus. I also use 3 oz. cream cheese and saute 4 or 5 chopped garlic cloves. I first tried this recipe about 4 months ago, and it immediately became my husband's favorite; he asks for it once a week!!! I also took some to my co-workers to try and they all fell in love with it too. Tip - If you are watching your sodium you can use 2 cups chicken broth and 1 cup water to cook the quinoa and there is no real difference in the taste of the final product. I do like the grated Romano over the top, nice addition and compliments the veggies.
