Creamy Garlic Sweet Potatoes

I thought my family would protest when I first substituted this for candied sweet potatoes. It's been many years and has now become the "most requested recipe" !

cup heavy cream

pounds sweet potatoes (about 4)

cup Panko breadcrumbs
1/4
cup shredded Parmesan cheese

tablespoon butter, melted
  1. Preheat oven to 325°
  2. Peel and cut potatoes into ½ in slices. Layer in 11”x7” ungreased baking dish; season layers with salt & pepper.
  3. Mix Panko crumbs, Parmesan; and 1T. melted butter; set aside
  4. Cook butter and garlic over med-low heat about 2 minutes; add flour cook for about 3 minutes; add cream, bring to boil and cook for 1 minute. Pour over potatoes in baking dish.
  5. Bake uncovered 1 hour, basting every 20 minutes.
  6. Top with Parmesan/crumb mixture; Increase oven temp to 400; bake 15 minutes or until topping is golden brown.
