Creamy Coffee Filled Brownies

Ingredients

box Betty Crocker® chocolate chunk premium brownie mix
Water, vegetable oil and eggs as called for on brownie mix box
4
cups powdered sugar
1
(3 oz) pkg. cream cheese, softened
2
tablespoons butter or margarine, softened
2
tablespoon coffee-flavored liqueur or coffee
1
cup dark chocolate chips
3
tablespoons butter or margarine

Directions

  • 1 Heat oven to 350° F (325° F for dark or nonstick pans). Grease or spray 8-inch square pan.
  • 2 Make brownies as directed on box, using water, oil, and eggs. Spread into pan. Bake 39 to 42 minutes or until toothpick inserted 2 inches from edge of pan comes out clean. Cool completely.
  • 3 In medium bowl, beat cream cheese, powdered sugar, 2 tablespoons butter and liqueur with electric mixer on high speed until smooth and creamy. Spread over cooled brownies.
  • 4 In small microwaveable bowl, microwave chocolate chips and butter uncovered on High 1 to 2 minutes, stirring once, until melted. Carefully spread over filling. Refrigerate 30 minutes or until set. Store in refrigerator.

These do not work. The top layer of chocolate hardens and when you try to slice, the chocolate layer sinks into the 'too creamy' cream cheese layer. Messy. IMO the only way to solve this is to reduce the amount of powdered sugar and use a full 8 ounce package of cream cheese. Perhaps only drizzle chocolate on the top. Will not use recipe again.

It calls for 4 cups of powdered sugar and then doesnt tell where to add it. I assumed the cream cheese layer but it was really too much sugar. I would only add may 1-2 cups and then maybe fold in some whipped cream to give it a little volume. Also I used coffee not liquer and it really didnt have much coffee flavor so I'd go with the liquer or with a coffee syrup. Mine didnt come out as cute as the picture but its chocolate and cream cheese- how could it not be good!
