Ingredients

pounds Red potatoes
2/3
cup milk
6
ounces cream cheese
3
ounces bacon pieces

  • 1 Clean potatoes under running water and cut out any dark spots/eyes
  • 2 Place potatoes in a large pot and fill with water until it covers the potatoes
  • 3 Place pot on stove set on high until boiling rapidly then put on medium-high heat
  • 4 Let potatoes boil for about 30 minutes or until a fork can be easily inserted
  • 5 Cook bacon in a skillet until crisp
  • 6 Place bacon on paper towels and crumble and set aside
  • 7 Drain potatoes
  • 8 Smash potatoes with back of fork or potato ricer
  • 9 Add milk to potatoes and stir until smooth
  • 10 Add cream cheese and stir well
  • 11 Fold in bacon pieces
