Ingredients

cup butter or margarine
1/2
cup chopped onion (1 medium)
1/2
cup chopped celery
2
tablespoons all-purpose flour
2 1/2
cups Progresso® chicken broth (from 32-oz carton)
2
cans (15 oz each) Green Giant® extra long tender green asparagus spears, drained
1
cup half-and-half

  • 1 In 3-quart saucepan, melt butter over medium heat. Add onion and celery; cook 4 to 5 minutes, stirring frequently, until vegetables are crisp-tender. Stir in flour. Cook 1 minute, stirring constantly. Stir in broth. Cook 5 to 7 minutes, stirring constantly, until thoroughly heated.
  • 2 Remove from heat. Stir in asparagus. In food processor or blender, process asparagus mixture until smooth. If necessary, asparagus mixture can be processed in batches. Return to saucepan.
  • 3 Stir in half-and-half. Cook 5 to 8 minutes, stirring occasionally, until slightly thickened and thoroughly heated.

This was a simple, and easy recipe. I did deviate from the blender though, and chopped my asparagus into pieces about 1/2" long, and for the onions and celery, I finely chopped those as well. I like a more chunky style soup. You may need to add salt & pepper to taste, based on your preference. If you want a thicker soup, you can use heavy cream instead of half & half. I will experiment with this recipe, and update my findings a little later. Any suggestions would be appreciated! Thanks...
