1: can Whole Kernel Corn, drained

1: can Creamed Corn

2: eggs beaten

1: box Jiffy corn muffin mix

1: stick butter, melted

1: cup sour cream

: Shredded Cheese (optional)

I have made this recipe in the past but added 1 cup of Swiss cheese to the mixture (not on top). It is fantastic that way. I made the same recipe for a side dish last night and added one large can of creamed corn (by mistake). I realized I should have used 2 small (8 oz.) cans (one of creamed and one of corn only). My husband and I couldn't tell the difference. It came out really good. I think the swiss cheese makes the taste richer.
