YUM-MO!!! I have made this 6 times since I found this recipe 2 weeks ago. I made the original version a few times. And a few variations: Original with almond extract. Lemon pudding, lemon extract, no mix-ins. Lemon pudding, cranberries, blanched slivered almonds, lemon extract. Vanilla pudding, chocolate chips, almond extract. I see the variations as endless. I want to try the pumpkin pie version. As another reviewer mentioned sometimes the dough is wetter than other times and the baking time is longer. I think this is my new go to cookie.

I have made biscotti from a few other recipes and they always turn out too hard. This recipe was fantastic. I knew it would be a hit when my husband said, "whatever you did to make these, keep doing it." He has to be the pickiest eater. Anyway, I made them again and did change a few things. I used sugar free pudding and dried cherries. My mother who doesn't like cherries thought they were wonderful. I then made them again but used sugar free chocolate pudding with dried cherries, wonderful. I think that next time I will use sugar free chocolate pudding with mini chocolate chips and dried cherries. This recipe is definitely a keeper.

I had Pumpkin Spice pudding mix and couldn't find sugar cookie mix (sold out at the store!) so I used the snickerdoodle mix. They were incredible. I added raisins and walnuts. Had to add 1 tbsp water to account for the different cookie mix. I can't wait to try other variations!

I don't know what to say...they turned out to taste great, but it seemed to take forever for them to bake.I finally had to leave home so after an hour, I turned off the oven, left the oven door open just a creak, left them in the oven until I got home three hours later. Like I said they are delicious, but I think maybe my eggs may have been too large...????

LOVE LOVE LOVE! It was an easy enough recipe that I tried this when I found it a couple years ago. It went straight into my standard Christmas cookie recipes. When I made it last year, I added more chopped pistachios and cranberries and a drop or two of green food coloring. I have to make two batches, just to have them as giveaways - so good!

This was so easy to make and a great gift to give. I used a nut topping that I found at the DollarTree and made the cost even better. I'm planning on using pumpkin pie spice pudding for the next batch.

I loved this recipe! So did my family. I am going to bake them for my children's teachers as part of their holiday gift bag. I used cranraisins and walnuts, mmmmmm. Definately a keeper for me!!! And very easy!!!!

These were closer to a sugar cookie bar than biscotti - next time I will just use 1 egg (follow the cranberry/chocolate chip biscotti recipe on this site). Also I used white chocolate chips in them instead of cranberries since I had no dried cranberries in the house. I think they will be better next time with less liquids/fats in them and hopefully it will be closer to "real" biscotti.
