I started to make this recipe last year except I changed it up alittle bit. I add more chopped apples, chopped nuts, and I exchanged the dried cranberries for fresh ones, for a double recipe, I add a whole bag of fresh ones. I make a double recipe and I put it in a 9 x 13 pan. My family and all the neighbors just love it. I also take it to the nursing home where my mom is as a treat for her and her nurses. Everyone just loves it. Sharon Wild

This is a delicious bread. I just made it on the 21st of December. I read previous reviews first hand. Chopped the apple instead of grating it, used less sugar (2/3 cup),less oil (14 cup)and used 1/2 cup of apple sauce, 1/2 cup of walnuts and I did up the 8 mini loaves as a previous baker suggested.....everything worked out wonderful. A bread is usually heavier o don't worry about how thick it is, I wouldn't suggest watering it down. I gave 4 of the mini loaves to our local newspaper guy for his Christmas present along with some other baked goods & hubby & I just had two mini loaves for our breakie with coffee. A keeper!!!

I made this last night and it turned out great. Reading the other reviews, I made a few modifications - only 2/3 c. sugar instead of 3/4, replaced 1/2 c. oil with 1/4 c. oil and 1/4 c. applesauce, chopped instead of shredded the apples, and only 1/2 c. walnuts instead of 3/4 c. walnuts. Even though I let it cool overnight, it was still soft and crumbly to cut. Delicious though.

I've have made this recipe alot ever since I found it on the website, only I changed just alittle. Instead of the dried cranberries, I added about 8 to 10 oz. of fresh cranberries. I can't tell how many compliments I have received on this bread and everyone wants the recipe. So far this season I have made 12 loaves, even some for the deer hunters in my family. I would give this a definite 5 spoon review.

I should have read the review about too much oil before I made this. It is way too oily for my taste and is a very heavy texture. If I make it again, I will use half the amount of oil and substitute apple sauce for the remainder of the oil.

Made this yesterday. Oh my, it is wonderful. So so moist and flavorful. I did however read comments first and actually used one of them; I cut up the apples instead of grating them. I also used half of the oil and substituted 4 ounces of apple sauce. I probably could have used all apple sauce for the oil, but this turned out so yummy I am glad I didn't. I was also surprised at how pretty the loaf looked with the sugar-crusted top. This would make a really pretty gift. Just wrap in clear colored wrap with a red bow. Make the cranberries pop!! I will definately make this again.
