Cranberry and Macadamia Nut Bark

Ingredients

  • 1 (1 to 1 1/4-lb.) pkg. vanilla-flavored candy coating or almond bark, cut into pieces
  • 1/2 cup sweetened dried cranberries or dried cherries
  • 1 (3.25-oz.) jar macadamia nuts, coarsely chopped

    Line cookie sheet with foil. Melt candy coating in medium saucepan over low heat, stirring constantly. Remove from heat.

    Stir in cranberries and nuts. Spread on foil-lined cookie sheet. Cool 45 minutes or until completely cooled. Break bark into 1 1/2-inch pieces. Store in tightly covered container.

  • Use your favorite nut in this bark recipe; toasted walnut halves pair especially well with dried cranberries, cherries or raisins.
  • If you're multi-tasking and don't have time to stir the candy coating, try the melting method. Heat the oven to 200°F. After a few minutes, turn the oven off and place the cut-up coating in a heart resistant bowl in the oven. Periodically, stir the coating until it is completely melted.
