c chopped cranberries
c orange juice
tbs grated orange peel
tsp baking powder
tsp baking soda
Preheat oven to 350 F. Grease a 9x5 inch loaf pan.
Mix flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in juice, shortening, peel, and egg. Mix until well blended (it will be very wet). Stir in cranberries. Spread evenly in pan.
Bake 55 minutes. Cool on a rack for 15 minutes. Remove from pan and let cool completely. Wrap and store overnight.
