Crab Tortilla Roll-Ups

Ingredients

cup Yoplait® Fat Free plain yogurt (from 2-lb container)

tablespoon chopped fresh cilantro

small tomato, chopped (1/2 cup)

medium green onions, chopped (2 tablespoons)

imitation crabmeat sticks (about 1 oz each), chopped*

cup finely shredded cabbage

cup finely shredded red bell pepper

medium green onions, sliced (2 tablespoons)

teaspoon red pepper sauce

  • 1 In small bowl, mix yogurt, cilantro, cumin, tomato and green onions.
  • 2 In 12-inch nonstick skillet, heat remaining ingredients except tortillas over medium-high heat 3 to 5 minutes, stirring frequently, until hot.
  • 3 Spread 3 to 4 tablespoons salsa on each tortilla; top with about 2/3 cup crabmeat mixture. Roll up each tortilla; cut diagonally into thirds.

Flour tortillas make great "wrappers" for sandwich fillings of all kinds. Low in fat (some brands are fat free), flour tortillas can also be cut into triangles and baked, giving you a healthier alternative to fried tortilla chips.
