cups shredded cooked chicken
cup barbecue sauce
can (15 to 16 ounces) garbanzo beans, rinsed and drained
can (15 to 16 ounces) lima beans, rinsed and drained
can (15 to 16 ounces) kidney beans, rinsed and drained
cup shredded Cheddar cheese (4 ounces)
Heat oven to 350º. Spray 2-quart casserole with cooking spray. Mix chicken, barbecue sauce and beans in casserole.
Bake uncovered 30 to 35 minutes or until hot and bubbly. Sprinkle with cheese. Bake about 5 minutes longer or until cheese is melted.
Let the kids make a zany zucchini cowboy head centerpiece for the table. Slice off one end of a large zucchini, and stand it on a plate. Decorate the top to look like a face, attaching food pieces such as carrot slices, raisins and grapes with toothpicks. Top it off with toy cowboy hat and bandana!
