Canned black beans are available in the ethnic foods aisle or the beans and rice section of most supermarkets.

Boil 2 or 3 extra eggs, and use thin egg slices as a simple, elegant garnish for the plate.

I love this recipe! I always omit the eggs, though. And I like to make the bean mixture the day before. It tastes even better after a full day in the fridge.

What can I say! I loved it. It was a hit with my family. I will be making this more often. The flavors blend so well. We used pretzel chips with this and it was great. This can be a meal all by itself.
